Tira-Miss-U Cake in Can

INGREDIENTS:   

 

Tiramisu Mousse: 
100g – Alaska Express Tiramisu
125 g – Water
500 g – Whip Cream

 

Lady Finger: 
120 g – Cake Flour
1 g – Salt

 

70 g – Sugar
150 g – Egg Whites

 

100 g – Egg Yolk
70 g – Sugar
4 g – Combani Vanilla Essence
2 g – Cream of Tartar

 

40 g – Powdered Sugar
 

Sugar Syrup: 
5 g – Coffee Powder
100 g – Water
10 g – Dessert Paste Mocha
 

Garnish: 
As desired – Bensdorp DSR Cocoa Powder

 

PROCEDURE:

 

Tiramisu Mousse: 
  1. Whip the whip cream until soft peak.
  2. Mix the AE Tiramisu and water using wire whisk.
  3. Add it to the whipped cream in order to get the texture of a mousse.

Lady Finger:

  1. Pre-heat oven to 180°C.
  2. Beat the egg yolks in mixer with wire whisk attachment together with sugar on high speed until the mixture becomes pale and thick. Then, add Combani Vanilla Essence.
  3. In a separate bowl, with the whisk attachment, whip the egg whites, cream of tartar and sugar at medium speed until frothy. Put at high speed and continue mixing until soft peak. Fold-in the egg white mixture onto the egg yolks then sift the cake flour and salt over the batter. Fold-in carefully until well incorporated.
  4. Transfer the batter to your pastry bag. Pipe the batter for about 3-inch long in the baking tray lined with Silpat.
  5. Bake for 8-10 minutes.

Sugar Syrup:

  1. Mix all ingredients and whisk until sugar is completely dissolved.
