Chocolate Bread

INGREDIENTS:

1000g – Bread Flour
160g – Sugar
15g – Salt
5g – Magimix Green
10g – SAF-Instant Gold
20g – Frio Cold Custard
10g – Superb Cocoa Powder
50g – Superior Shortening
15g – Favorite Chocolate Flavor
100g – Eggs
480g – Water (Cold)

 

PROCEDURE:
  1. In a dough mixer, place all ingredients except shortening until dough comes together.
  2. Add in Superior Shortening and continue
  3. Remove the dough from mixer and rest it on the bench for 15 minutes.
  4. Scale the dough into desired weight and rest again for 15 minutes. Shape and fill the dough desired filling and place it into the baking trays and proof for 1 1/2 hour.
  5. Bake at 375°F for 15-18 minutes or until done.
