Chicken Pesto Bread

INGREDIENTS:        

 

780 g – All Purpose Flour
180 g – Cake Flour
180 g – Sugar
14 g – Salt
180 g – Butter Dreams Margarine
135 g – Eggs
45 g – Yolk
3 g – Magimix Green
2 g – Magimix Yellow
9 g – Saf-Instant Yeast Gold
270 g – Water
11 g – Basil, chopped
36 g – Garlic, chopped and lightly toasted

 

PESTO: 
35 g – Basil
70 g – Olive Oil
20 g – Parmesan
21 g – Cashew
1.75 g – Salt
3.5 g – Garlic

 

1/2 kg – Chicken (Breast Part)

 

PROCEDURE:
  1. Blend then sift all purpose flour, cake flour, Magimix Green and Yellow, and Saf Instant yeast. Set aside.
  2. Place sugar, salt, eggs and water then place the dry ingredients.
  3. Mix the dough and after 5 minutes of mixing, add Butter Dreams Margarine.
  4. Mix until partially developed. Let rest for 45 minutes and remix. Add basil and garlic.
  5. Cut to 30g (3pcs per braid) (18pcs).
  6. Form into balls then let rest for 10 mins.
  7. Flatten dough and form into oblong shape.
  8. Make 3 braids then arrange on Silpat then egg wash before proofing and baking.
  9. Proof then garnish and bake at 170°C/ 175°C for about 10-12 minutes.

PESTO: 

  1. Clean leaves then put all ingredients in food processor. Blend then chill overnight.

CHICKEN: 

  1. Clean then blanch (chicken breasts fillet 1/2kg) then pull meat to make strands.
  2. Marinate on sesame oil and pepper for about an hour or more.
  3. Mix grated melting cheese (200g) and all purpose cream (200g) then apply as topping.
  4. Garnish with pesto, chicken strands then drizzle with mayonnaise. Optional: Add corn kernels.
