Freshfields Apple Crumble Tart

CRUST INGREDIENTS:
175g All Purpose Flour
125g Butter
50g Cold Water
5g Salt
10g Sugar

 

PROCEDURE:
  1. Combine together all purpose flour, sugar, salt and butter. Rub together to form coarsely crumbs.
  2. Sprinkle water to form a dough. Rest for 10 minutes.
  3. Divide the dough into 14 equal weight and fit in 3 oz. Tart trays.

 

APPLE FILLING INGREDIENTS:
100g Brown Sugar
50g Chellies
4g Cinnamon Powder
250g Diced Apple
50g Frio Custard Powder
5g Nutmeg
50g Raisins
50g Walnut, chopped

 

PROCEDURE:
  1. Combine Frio custard powder, brown sugar, nutmeg, cinnamon powder, raisins, Chellies and chopped walnuts. Toss it into diced apple. Set aside.

 

STREUSEL TOPPING INGREDIENTS:
200g All Purpose Flour
100g Butter
50g Powdered Milk
50g Sugar

 

PROCEDURE:
  1. Combine and rub ingredients together to form coarsely crumbs. Set aside.

 

TO ASSEMBLE:
  1. Deposit the apple filling into prepared tart shell equally.
  2. Cover it with streusel crumbs.
  3. Bake it at 350 ⁰F for 15 – 18 minutes, or until golden brown.
